Aviyal is a delightful mix of all sort of vegetables . This goes well with kara kuzhambu / vathal kuzhambu & it is also a best side for kara adai & Aapam .,.. I strongly recommend you try this cos it as lots of healthy ingredients " VEGETABLES " & second thing is its TASTE . Try this recipe.. have a healthy & fit life !! Happy Cooking :) :)

Ingredients 

Chopped Mixed Vegetables - 2 cups.
( Carrot small- 2 , 
potato - 2 , 
Broad beans - 3 no. ,
Beans - 5 no. ,
Plantain / Vazhaikai  ,
drumstick - 1 , 
snake gourd
Mango - 3 pieces )

Salt to taste
Curd - 1/4 cup 

To grind ( grind with less water )

Coconut - 3 tbspn
Cumin / seeragam - 1tspn
Green chillies - 3

To temper 

Mustard & curry leaves in 1 tbspn of oil. ( use cooking oil OR coconut oil )

Method

Cook all the vegetables with little salt.




Heat a pan with oil & drop mustard and curry leaves .



Add the grinded coconut paste with 1/2 cup of water.




Add all the cooked veges.




Add a pinch of turmeric .

Add salt & mix well.

Let it come to boil.Switch off the stove.

Add well beaten Curd & mix well . ( don't cook after adding curd )
