Kara kuzhambu is a popular gravy in south India especially in TamilNadu . This is one of the easiest & simple gravy that can never go wrong :) It goes well with any veg poriyal / egg poriyal / appalam / aviyal . At least once in a week tamilnadu people will hit on this kuzhambu for sure .. Cos it doesn't need any special vegetables or a big procedure.. Even Beginners can hit sixer with this recipe !! Ingredients
Drumstick - 1
Chopped Pototes - 2 medium sized
Chopped Onion - 2
Chopped Tomato - 2
Brinjal - 3
Tamarind - 1 lemon sized
Vadagam - 1 tspn (optional )
Homemade chilly powder - 2 full tbspn
(OR pure chilly powder - 1 tspn , coriander powder - 2 tspn )
Turmeric - 2 fat pinch
Salt
To Temper ~
Oil - 2 tbspn
Curry leaves - few
Fenugreek / vendhayam - 1 tspn
Mustard - 1 tspn
Method
Heat a pan / kadai with 2 tbspn of oil
Drop mustard , fenugreek & Curry leaves .
Add chopped Onions & saute well until onion get little cooked .
Add Vadagam & saute for 1 min. (optional Step)
Add tomatoes & saute for 2 mins.
Add the chopped potatoes , drumsticks & brinjal.
Add half cup of water .
Add salt for cooking veges.
Add turmeric powder.
Let this gravy come to boil & veges get cooked.
Once the veges get cooked , add tamarind water 1 cup
Check for gravy consistency, remember that gravy gets thick due addition of tamarind &
chilly powder later.. so check consistency & add water according to that .
Add Chilly powder & salt .
Keep it in low flame , cook until the raw smell of chilly powder goes (max - 10 to 15 mins )
You can add 1 tbspn of sesame oil while switching off stove (optional step)
Serve it with hot rice .
