How to prepare Manathakkali Vathal  Ingredients  Manathakkali - 2 cups Curd - 1/2 cup Salt - 1tspn *  Clean and wash manathakkali. *  Add salt to curd and mix well *  Add the manathakkali seeds to the salted curd and soak it over night *  Drain the manathakkali from curd and transfer to a plate next day & let it dry in sunlight. *  Evening , soak again in curd and repeat the same process till the curd completely absorbed by manathakkali seeds.  * Store it in air tight Box.

Ingredients Athikai / small figs - 1 cup Moong dhal - half cup Coconut  - 3 tbspn Tomato - 1 Cumin - 1 tspn Turmeric powder - 1tspn Home made chilly powder - 1tbspn Salt as per taste For tempering.. Mustard , curry leaves , dry red chilli - 2.no Ghee / veg oil  - 1 tbspn Steps For making Athikai Kootu 1.Clean moong dhal and pressure cook it for 2 or 3 whistles. 2.Wash athikai and cut it into half .. grind it coarsely or crush it using motor. I grinded light coarsely because my son eats it only if fig dissolves in gravy .. if we crush it ll be visible for him so he may avoid eating it... small trick to make him eat healthy foods. For others, you can also try crushing them lightly .. so that you can taste the fig separately in gravy. 3....

பருப்பு உருண்டைக்குழம்பு / Urundai Kulambu

Ingredients  Kadala paruppu / Channa dhal - 1 cup Sombu ( Aniseed/Fennel) -  1 tspn Tamarind - small lemon sized . Onion - 2 no. Garlic - few. Tomatoes - 2 no. Coconut - 2 tbspn Kulumbu milagai powder (Homemade chilli Powder) 2 tbspn For Tempering  Mustard - 1 tspn Vendhayam - 1tspn Vadagam (optional) Curry leaves & coriander leaves. Steps for making balls  Soak kadala paruppu (channa dhal )for 1 hour (1/2 hr atleast) Coarsely Grind the soaked dal with sombu .(pulse mode twice or thrice) Transfer the grinded dhal in bowl. Add chopped onion ( half cup) Add chopped green chilli - 1 (optional)  Add chopped curry leaves and coriander leaves. Add salt. Make small balls and place it aside. Making of Urundai Kulambu Soak Tamarind 10 mins before. Heat kadai , add 2 tbspn of vegetable oil (or gingelly ) Do the tempering with mustard, vendhayam, vadagam(optional),garlic,curry leaves. Ingredients : Curd - 1 cup. Turmeric - 2 fat pinch. Chopped Onion - 1 To Grind : Coconut - 3 tbspn. Jeera - 1 tspn Green chilly - 3 ( or as per your taste ) Ginger - small piece (optional ) Vegetable Options ~  Sepankizhangu / white pumpkin / Vazhakaai / chow chow / Ladies finger / urad vada.  ( I used Sepankizhangu here ) To Temper : Mustard - 1tspn  Curry leaves & coriander leaves - few. Method : Heat a kadai , in 1 tbspn of oil & do the tempering. Add onion & saute until it is cooked. Add cooked Sepankilangu to this & fry for 1 min. Add small amount of water to this and salt for kilangu . Allow it to cook for 2 mins in medium flame. Add the grinded coconut paste with 1 cup of water  ( use water as per your consistency req ) Add Salt  & turmeric . Allow it cook in medium flame until it starts bubbling. Kara kuzhambu is a popular gravy in south India especially in TamilNadu . This is one of the easiest & simple gravy that can never go wrong :) It goes well with any veg poriyal / egg poriyal / appalam / aviyal . At least once in a week  tamilnadu people will  hit on this kuzhambu for sure .. Cos it doesn't need any special vegetables or a big procedure.. Even Beginners can hit sixer with this recipe !! Nandu Kuzhambu I got this recipe idea from my soyachunks curry which i made for chappathi. It was totally totally as good as non veg dish ,so all motivators in my home told me to try this soyachunks curry with Crabs instead of soyachunks.. Poricha Kuzhambu is one of my favourite gravy , cos it is " The Simplest " gravy  for Beginners to learn and get good comments & am sure there is no doubt about it !! It goes well with pappads or any spicy side dishes. We normally cook this, only on our lazy days..that is when, myself & mom have no ideas or gone mad in a thought process of what to cook for lunch.. 2 potatoes & 1 drum stick is more than enough for this dish to bring yummy flavor . This is my Mom's Favorite dish <3 I dedicate this recipe to my mom Mrs. Ambiga thavasaiyan :) Pagarkai theeyal is a kerala recipe .. Normally i hate bitter guards but this recipe is an exceptional case :) :)  if you cook in the correct manner ,  You ll never feel any kind of bitterness in this dish. ..
