Ingredients
Basmati Rice - 1 cup
Water - 1 & 1/2 cup (or 1 & 3/4 cups ..depends on ur rice type)
Chicken - as per your req.
Mint leaves - 1 cup
Chopped Onion - 2 medium sized
Chopped tomatoes - 2 medium sized
Green Chilly - 2
Ginger Garlic Paste - 1 tbspn
Pure Red chilly powder - 1 tspn
Coriander Powder - 2 tspn
Gram masala powder - 1/2 tspn
Curd - 1 cup.
Salt - to taste.
To temper ~
Bay leaf , cinnamon , cardamon & fennel seeds.
* Points to Remember before we jump into Briyani prep *
Rice & water is the most important factor in briyani . If you do any mistakes in that step your briyani may become Pongal.. ha ha ;) ;) & we cant correct that later .. don't panic!!! Its not a Rocket Science :)
I used Electric Cooker here... which means i dint worry about the timings ... whereas if you use normal Pressure cooker , let the chicken gravy with water for rice get boil.. add the rice & close the cooker .. Wait for 10 mins .. Switch off the stove & DO NOT OPEN Immediately... wait until pressure releases or wait 10 mins to Open it & serve.
Method
Clean the chicken.
Heat a kadai or pan with 4 tbspns of oil .
Do tempering with bay leaf , cinnamon , cardamon & 1 spn of fennel seeds.
Add Onion , green chilly & ginger garlic paste .
Saute for a min.
Add tomatoes & saute it well.
Add Chicken pieces.
Add all spice powders .. Red chilly powder , turmeric powder , coriander powder & garam powder.
Add Curd
Add Mint leaves.
Cook it in low flame for 3 - 4 mins.
In Electric cooker ~
Clean the rice and add water req.
Add the briyani gravy to the rice.
Add SALT.
Add 2 tbspn of ghee.
Mix well.
Close the lid.
After switch get tripped do not off the electric cooker.
Let it be in "keep warm" mode for 10 mins.
In Normal Pressure Cooker ~
Add the required water ( for rice ) to the gravy cooked.
Add Salt required.
Let it come to bubbling stage.
Add Rice.
Mix well.
Close the lid.
Keep it in full flame for 10 mins.
Do not open it immediately after 10 min.
Wait until pressure releases or open it after 10- 15 mins.
Stir the briyani well , Check for salt & add it if necessary.
Serve it with Raitha & any spicy chicken side dish . ( Tandoori Chicken )
