Egg Bhurji / Scrambled eggs South Indian style




Egg Bhurji is one of the easiest & yummy side dish for all kind of gravies / kuzhambu Varieties. It's a combination of Scrambled eggs , onion & green chillies with turmeric & salt. There are many verions in preparing this egg bhurji .. Some people add tomatoes & chilly powder in addition to those ingredients.But my family love this version of only onion & green chilly with scrambled eggs. It goes well with Curd rice & All kind of spicy veg gravies / kuzhambu .

Ingredients :

Eggs - 3
Chopped Onion - 3 medium sized 
Chopped Green chillies - 4 to 6 
Curry leaves - few
Oil - 2 tbspns 
Salt to taste

Method :

Heat a kadai or pan with 2 tbspns of Oil.

Drop curry leaves, green chillies and then add finely chopped onion.

Saute this until onions get cooked.

Slow the flame.

Break the eggs & add it the mixture in kadai.
Add salt & a fat pinch of turmeric powder. 

Stir the mixture well so that it wont stick to the kadai.
Keep on stirring .. Once the eggs are cooked remove it from the flame.

Note : If you add cooked rice to this mixture & a fat pinch of pepper (optional ).
