Prawn Briyani


Ingredient

Prawn - 1/2 kg
Tomato - 2 medium
Onion - 3 medium 
Ginger garlic paste - 1 tbspn
Briyani masala - 1 tbspn
Salt as per taste
Patta , bay leaf , Cloves - few.
Cardamon - 2 no.
Coconut milk - for boiling rice (2 cups)
Basmati rice .


Steps 

1.Wash & Clean prawns .

2.Soak basmathi rice for 10 mins.

3.Heat pan, add 2 tbspn of vegetable oil .
Add bay leaf, paata ,cloves & cardamon.

4.Add the ginger garlic paste .

5.Add the chopped onion .. saute for few mins 
6.Add the chopped tomato.. Saute for few mins 
7.Add the prawns... mix well with masala.
8.Add Briyani masala & a pinch of turmeric powder.

(alternate masala for briyani masala... 
1. red chilli powder 1 tspn & coriander powder - 2tspn with garam masala - 1spn.
OR
2. You can also use 1 1/2 tbspn of Homemade chilli powder .)

9.Add the soaked rice.

Rice and water ratio :

For 1 cup of basmati rice i added  1 and 1/2 cups of water (coconut milk).
Boiling of rice is totally depends on the type of rice and quantity of water you are using..

Preparing coconut milk
Grind 4 or 5 tbspn coconut into paste. add 2 cups of water to it.
Filter the coconut milk.

10.Add the coconut  milk to the pan.
11.Add salt as per taste.

12.Close the pan with lid.
13.Keep the flame in medium & wait until the rice is done.
Garnish with mint and corriander Leaves .
