Chicken Briyani ( Simple & Basic method )

             Chicken Briyaniiiiii ... Its hard to say NO to this.. Its almost everyone's favourite in India.. we have different types of chicken briyani.. my brother used to make briyani in soo many versions.. he always give his best shots when it comes to Non-Veg ..esply Chicken :) This Recipe is my mom's style which is very simple & easy to make.. It just takes nearly 20 mins to prepare.. Beginners must try this & make others wonder about your cooking .. Happy Cooking :) Ingredients  Basmati Rice - 1 cup Water - 1 & 1/2 cup (or 1 & 3/4 cups ..depends on ur rice type) Chicken - as per your req. Mint leaves - 1 cup Chopped Onion - 2 medium sized Chopped tomatoes - 2 medium sized Green Chilly - 2 Ginger Garlic Paste - 1 tbspn Pure Red chilly powder - 1 tspn Coriander Powder - 2 tspn Gram masala powder - 1/2 tspn Curd - 1 cup. Mor kuzhambu

Ingredients : Curd - 1 cup. Turmeric - 2 fat pinch. Chopped Onion - 1 To Grind : Coconut - 3 tbspn. Jeera - 1 tspn Green chilly - 3 ( or as per your taste ) Ginger - small piece (optional ) Vegetable Options ~  Sepankizhangu / white pumpkin / Vazhakaai / chow chow / Ladies finger / urad vada.  ( I used Sepankizhangu here ) To Temper : Mustard - 1tspn  Curry leaves & coriander leaves - few. Method : Heat a kadai , in 1 tbspn of oil & do the tempering. Add onion & saute until it is cooked. Add cooked Sepankilangu to this & fry for 1 min. Add small amount of water to this and salt for kilangu . Allow it to cook for 2 mins in medium flame. Add the grinded coconut paste with 1 cup of water  ( use water as per your consistency req ) Add Salt  & turmeric . Allow it cook in medium flame until it starts bubbling. Rava Kesari

Ingredients : Sweet Attack Db's Rava Kesari Rava / Sooji - 1 cup Full Sugar - 2 cups  ( 1 & 1/2 cup for those who prefer medium sweetness ) Water - 2 1/2 cups Ghee - half cup Cashew nuts , Raisins - few kesari color powder - 2 small pinch. Method : Roast the rava in low flame until its aroma comes out. Heat a kadai , add 2 tbspn of ghee. Fry cashew and raisins. Add water and Kesari color powder to the pan & allow it to boil . When it starts bubbling add sugar a nd then the roasted rava slowly -stir continuously. make sure no lumps are formed.   add the remaining ghee to the kesari. Keep stirring till it forms a mass leaving the sides of the pan. Switch off the stove & serve it with sweet smile :)
