Channa /Kondai Kadalai Kuzhambu

Ingredients : Kondai kadalai / Black channa - 1/4 cup Chopped Onion - 1 Chopped Tomato - 1 Chopped Potato - 1 Chopped Brinjal - 5  Tamarind Juice - 1/4 cup (OPTIONAL) Mustard - 1/2 spn Turmeric powder - 1/2 spn Chilly Powder - 1/2 tbspn Salt To Grind : Grated Coconut - 2 to 3 tbspns Red chilly - 2 Black pepper - 1 spn Fennel Seeds - 1/2 spn Method : Wash and soak channa Over night. Heat oil (2 tbspns) Drop Mustard , curry leaves. Drop Onion and fry it. Add tomato and cook it well. Add Chopped Brinjals , Potatoes and drumstick and fry it for few mins. Add Cooked Channa. Now add the paste we grinded with half cup of water. Add salt , turmeric powder and chilly powder. Cook until all veggies are cooked enough. Add Tamarind juice and cook it for 3 to 5 mins in low-med flame.(optional step) Goes well with hot rice or Tiffin items like idly, dosa , poori and chappathi :)

Kathiri Vathal Kuzhambu

Method : To Grind  - shallots ( chinna vengayam -10 nos ) with red chillies (3) , Fried ( fenugreek - 1/2 spn , bengal gram - 1 spn , corriander seeds - 1/2 spn ) curry leaves - 5 , garlic - 5, black pepper - 1/2 spn , cumin (jeeragam) - 1/2 spn. Heat Gingelly oil (2 to 3 tbspns)  Drop mustard , Curry leaves Add Ground nuts (verkadalai) and fry for 1 min Add kathiri vathal and fry it for 1 min Add Drumstick and fry it (Optional step) Add the grinded paste. Add salt , tumeric powder - 1/2 spn , Chilly powder - 1 spn OR Sambar powder - 2 spns. Add water - 1/2 cup Let this cook for few mins. (approx 2 to 3 mins) Now add tamarind juice (1/2 cup) In low-med flame cook the gravy until it becomes thick or till the consistency you desire. Goes well with Rice or Tiffin items like idly and dosa.   

Egg in Hole

Method : Cut the bread in middle in any shape you desire .,i.e., a round / heart shape. Take 2 eggs and beat them up. Heat pan with some butter / ghee. Place the bread , pour the egg inside the hole of bread. Sprinkle some pepper and salt in it. keep it in low flame , Cover the pan with any lid. Turn the bread once the egg is cooked. 

Pepper Mushroom Fry

Ingredients : Mushroom - 1 cup Oil - 3 to 4 tbspns Cumin Seeds / Jeeragam - 1 tspn Green Chillies - 3 ( Narrow cut ) Curry Leaves - few Chopped Onion : 1 1/2 cup Chopped Tomato : 1 no. Whole Black pepper - 3 tbspns or as per ur spice level ( coarsely powdered ) Chopped Garlic - 2 tspn Chopped Ginger - 1 tbspn Salt Method : 1.Heat oil in pan,drop Cumin seeds and curry leaves. 2.Drop onion , garlic , ginger , green chillies and fry for 2 mins. 3.Add tomato and 2 pinch of salt . Let this be cooked for 2 more mins. 4.Now add the cleaned and chopped mushrooms. 5.Mix well , cover the pan with a lid and keep it in low flame for 5 mins. 6.Add Salt and Pepper and mix well . 7.Again cover it and keep it in low flame until mushrooms are  cooked well or till the consistency you desire.

Aloo Paratha

Ingredients : Wheat flour - 1 cup Oil - 2tbspns Water and salt Make use of the above items and prepare the dough as for chappathi. Stuffing : Well Boiled Potatoes - 3 ( 4 whistles in Pressure Cooker ) Turmeric powder - half spn. Chopped Green chillies - 3 to 4 tbspns Chilly powder - as per ur taste Pinch of salt Cumin Seeds (optional) Garam (optional) Method : 1. Peel the potatoes and mash it well. 2. Combine all the stuffing ingredients and mix it well. 3. Roll dough into round shapes and keep the stuffing in it  4. Now seal the edges and roll the paratha so that the stuffing is not coming out. 5. Heat the pan and place the rolled paratha 6. Apply some oil on the sides of paratha and turn it on other side. 7. Serve with Curd / Pickle / Coconut chutney. My Fav is Curdddd <3 :) :)

All Green Chutney

Ingredients : Pudhina / Mint - 1 cup Corriander - 1 cup Curry leaves - 1/2 cup Chopped Tomato (medium sized) - 2 Chopped Onion (medium sized)- 2 Grated Coconut - 1/2 cup Garlic - 3 Tamarind - little amt Urad dhal - 1tbspn Red chillies - 6 to 8 Mustard - 1 spn Salt. Method : 1.Heat pan with 2 spn of oil. 2.Drop mustard, urad dhal and fry until it turn light brown. 3.Fry all the above ingredients and grind well with salt as per your taste. 4.Goes well with idli , Dosa :)

Spicy Podi Idly

Ingredients : Left Over idlies : 6 to 8 Idly podi : 4 tbspns Salt to taste Oil : 2 tbspn Curry Leaves : few Urad dhal : 1 tbspn Chilly powder : half spn. Method : Heat Pan with 2 tbspn of oil. Drop urad dhal and fry untill it turn light brown. Drop Curry leaves and then the chopped idlies Fry this for 1 min. Now Add the Idly Dosa Podi (do visit our  Idly dosa podi  prepration) and the chilly powder. Mix well and the salt as per your taste. (note that idly and podi we use already have salt so aware of how much you add here) Fry and cook this 5 to 6 mins. Serve with Smile :)

Toor Dhal Rasam

Ingredients : Well cooked Toor Dhal : 1 Tbspn Toor Dhal water in which it boiled : 1 1/2 cup Tamarind water : 1 cup ( lemon sized tamarind ) 1 small Tomato smashed Asafoetida : small amt Turmeric powder : 1/2 spn curry Leaves and Corriander leaves - few & the major one .......... Salt as per your taste :) :) To Grind - 1 spn of Corriander seeds, 1 spn of black pepper, 1 spn of jeera, 3 Red Chillies. Db's Parupu Rasam Method : 1. Grind the items mentioned under the section "To Grind" 2.Add some water to it and pour in a bowl. 3.Add dhal water, tamarind water, turmeric powder,asafoetida,salt,smashed tomato,cooked toor dhal 1 tbspn  in that bowl an mix it well. 4.Now ON the stove and Let this cook until it starts boiling. 5.Once it gets bubbles OFF the stove. 6.Do tampering with mustard, curry leaves and one red chilly. 7.Finally decorate it with Corriander leaves :) Visit Sides : Healthy Curryleaf Chutney

Cauliflower Kheema

Ingredients : Cauliflower - 1 full cup grated. Grinded onion - 2 Grinded Tomatoes - 2 Ginger Garlic paste - 1 Tbspn Boiled Green Peas - half cup Turmeric powder - half spn Chilly powder - 1 1/2 tbspn Corriander powder - 1 tbspn Garam powder - 1 tbspn Salt to taste Oil - 2 tbspns Db's Cauliflower Kheema Method : 1. Heat pan with 2 tbspn of oil. 2. Pour Grinded Onion and ginger garlic paste.Cook for 1min. 3. Pour Grinded Tomato and 2 pinch of salt so that tomato cooks fast. 4. Add all the masala powders mentioned above and mix well. 5. Add Green Peas and grated cauliflower to the mix. 6. Add half cup of water.Since we need the gravy to be thick , dont add too much of water. 7. Add salt needed and mix well  8. Cook in low-medium falme covered with lid for 7-10 mins 9. Serve it hot with chappathi or      just roll it inside chappathi and call it as "Cauliflower kheema Chappathi Roll" ;)

Oats Sweet

    DB’s SPECIAL QUICKY “OATS  ATHIRASAM (SWEET)”             Take that Grinded Oats mix in a bowl .    Take some amount of jaggery (Vellam) , dissolve it in    water          (this jaggery water consistency   must be bit thick (not too thick or too watery)           Maintain a in btw  stage.    Add this sweet water to the oats powder slowly  slowly mella mella… ;)    Thick paste should be formed as output of ur slowly slowly mella mella process.    Now use your index finger , dip it in mix , take ur finger to mouth , lick it ;) :P          It must taste good  (it will :D no wries ;)    In a kutty pan heat oil in medium.         Drop this mix in any shape you need  or just drop it using a spoon in oil          and ...

Idly Dosa Podi

Ingredients : Red chilly - min 30 to  max40 Urad dhal - 1 full cup Garlic - 5 to7  Curry leaves - half cup Dhaniya / corrainder seeds : 2 tbspns Salt to taste Oil - 1 tbspn Asafoetida - small amount (not the powdered one) Db's Idly Dosa Podi Method : 1. Heat pan with 1 tbspn of oil. 2. Fry Asafoetida and keep aside.. 3.On the same pan fry red chillies (Dont fry too much) 4.Similarly fry all other items separately ( without oil ) 5.Now grind chillies first and all other with salt. 6.Grind coarsely and serve with gingelly oil for better taste :)
