Tomato Ginger Chutney

Ingredients  Tomatoes - 3  Onion - 2 Ginger - 2 coin sized Dry Red chilli - 2 Salt as per tatse Method Heat Kadai with 1 tbspn of oil. Add dry red chilli and ginger. Add chopped Onion and saute for 2 mins. Add chopped tomatoes and saute until soft.  Grind them with little water and salt. Do the tempering with mustard , a pinch of hing and curry leaves. Serve it with Idly / dosa. Variations You can try... * Add mint leaves , coriander leaves and curry leaves little fried with other  ingredients and grind it .

All Green Chutney

Ingredients : Pudhina / Mint - 1 cup Corriander - 1 cup Curry leaves - 1/2 cup Chopped Tomato (medium sized) - 2 Chopped Onion (medium sized)- 2 Grated Coconut - 1/2 cup Garlic - 3 Tamarind - little amt Urad dhal - 1tbspn Red chillies - 6 to 8 Mustard - 1 spn Salt. Method : 1.Heat pan with 2 spn of oil. 2.Drop mustard, urad dhal and fry until it turn light brown. 3.Fry all the above ingredients and grind well with salt as per your taste. 4.Goes well with idli , Dosa :)

Raji's Tomato Thokku

Here, with a bigu smile am glad to publish my friend Raji's Recipe... Ingredients : Tomato - 4 Dry Red chilly - 3 Salt to taste Asafoetida Curry Leaves Oil - 2 tbspn Method : 1. Grind Tomatoes and chillies with salt. 2. Heat pan with oil . 3. Drop Mustard,asafoetida and curry leaves. 4. Add the tomato paste and cook it well (5-8 mins minimum) until tomato puree comes to a thick form. 5. Raji's Tangyyyy Tomato Thokku is Ready to serve. I love this with idly and chappathi :)

Pudhina Chutney

Ingredients  : •  Pudhina leaves – 1 bowl •  Coconut – 2 or 3 table spoons / as per your taste. (optional) •  Varamilagai / Dried red chilly – 5 / as per your taste •  Salt – as per your taste •  Tamarind – Small amt. •  Oil – 1 spoon •  Mustard , Black gram dhal , Asafoetida. Method : • Heat pan with oil , drop Mustard , Black gram dhal (ulutham parupu ) , Asafoetida  (Perungaya thool). • Then drop the red chillies , tamarind, 1 garlic ( oru pallu vellai poondu) . Let these be cooked for few seconds. • To that drop our washed mint leaves and coconut (opt) , heat this mixture till our mint leaves are shirnked well.  Grind this mixture with salt as per your taste. Note :   While Grinding the chutney ,  do keep on tasting in between so that you can adjust the salt , tamarind and chilli. * Hot and Tangy Tomato Chutney * Ingredients : Chopped Onion -2  Chopped Tomato -2  Dry Red Chilly -4 Tamarind - very small amt (or as your taste) Salt to taste Method : Fry all the above items one by one and Grind it to paste. ------------------------------------------------------------------------------------------------------------ * Coconut Tomato Chutney  * Ingredients : Chopped Tomato -2 Chopped Onion -2 Coconut - half cup Urad dhal - 1 Tbspn Dry Red Chilly - 3to4 Salt Method : 1.Fry Urad dhal (ulutham paruppu) until it turn light brown. 2.Drop Onion , Red chilly and fry for 1 min. 3.Drop Tomato and fry it for 1 min. 4.Add Coconut and cook for 1 min. 5.Add salt and grind it. Healthy CurryLeaf Chutney

Ingredients :  Curry Leaves - 1 cup Bengal Gram / Kadala Parupu - 1 Tbspn Coconut - 1 cup Dry Red Chilly - 3 (or as per your Taste) Salt. Method : 1. Heat pan with 1 tbspn of oil. 2. Drop Bengal gram and fry until it turn light brown. 3. Add curry leaves , coconut and red chilly  4. Cook for 2 mins. 5. Grind this with salt as per your taste. Note : Coconut helps to decrease the bitterness of Curry Leaves. Curry Leaves chutney can be served with  hot rice and ghee / Curd rice / Rasam Rice.
