அரிசி பாயாசம் / Arisi Payasam - 50th Post

Ingredients : Milk - 4 Cups  Basmathi rice - 1/3 cup Sugar - 1/2 cup  Crushed Cardamon - 3 to 4 Saffron - a pinch ( optional ) Condensed milk - 1tbspn Pista , cashew , Raisins - few Method : Clean the Rice & Pressure cook it with 1 cup of milk and 1 1/2 cup of water . Wait for 3 whistles. Once pressure releases , mash the cooked rice for soft consistency of payasam or if you wish for normal Rice in Payasam .. ignore mashing step.   Boil the remaining 3 cups of milk , Wait till it get boiled. Add  Cooked rice , sugar , condensed milk , crushed cardamon & saffron (opt) Check for sweetness & pat yourself for your yummy payasam ;) Let it boil until it gets to perfect payasam consistency ( 5 to 7 mins max) Switch off the stove. Samba Godhuma Rava ( Broken Wheat ) Upma

Ingredients :  Broken Wheat - 2 cups Water - 4 to 5 cups  Chopped Onion ( medium size ) - 2 Curry leaves - few Mustard and urad dhal - To temper. Jeeragam - 1 tspn (optional) Salt.  Method : 1. Heat Pan with 3 to 4 tbspn of Oil . 2. Drop mustard , urad dhal , jeera , curry leaves and then the chopped onions. 3. After onion turns little transparent, add water. 4. Add Salt and check the salt content in water ( if u miss salt here, you cannot add it later ) 5. Now drop our broken wheat when the water in pan starts bubbling . 6. Don't stir continuously cos it may turn like paste. 7. Stir once or twice and leave it in low flame until you reach the perfect upma consistency. 8. Stir at last so it won't get stick in pan due to heat.

Elephant yam / Senai / Karunai kilangu Vadai

Ingredients : Grated yam - 1 cup Red Chillies- 3 to 4 Chopped Onion - 1 Jeera - 1 tspn Rice flour - 3 to 4 tbspn Oil to fry Salt as per your taste. Method : Peel the yam and grate it finely. Wash the grated yam. Grind grated yam , onion and red chillies. (do not use excess water for grinding) To this paste  add rice flour and salt. Mix well and make perfect vadai dough. Fry the yam vadai till it turns golden color.

Spicy Soya Chunks (meal maker) Gravy

Ingredients : Soya chunks / Meal maker - 15 ( as per your need ) Chopped Onion - 2 Chopped Tomato - 2 Grated Coconut - 3 tbspns  Black pepper - 1/2 to 1 tspn Fennel Seeds - 1 tspn Ginger Garlic paste - 1 tbspn Curry leaves & coriander leaves - few Method : 1. Boil water & off the stove , Soak soya chunks for two minutes and drain the water from soya chunks. Clean it with cold water for two times to get rid of the raw smell in soya chunks.   2. Heat pressure cooker with 1 tbspn of oil , Saute onion & tomato for few mins. 3. Grind Coconut, Black pepper , Fennel seeds with the cooked onion and tomato.   4. Heat cooker, add 1 tbspn of oil , saute little onion  with curry leaves and ginger garlic paste.  5. Add the grinded paste with 1/2 cup of water ( as per your consistency need ) 6. Add Chilli powder , turmeric, corriander powder and salt. Mix well and add soya chunks. 7. Close pressure cooker ....

Pudhina/ Mint Rice

Ingredients : Mint Leaves Onion -2 Chopped Briyani leaf and patta - few Green Chillies - 3  Groundnuts - 1 small cup Ginger garlic paste - 1 full spoon Salt - as per taste Oil - 2 tbspns Cooked rice. Method : 1. Clean mint leaves and fry it for few mins till it get shrink. 2. Grind the cooked mint leaves. 3. Heat a pan with oil , fry brinyani leaf,patta,green chillies,onion,groundnuts and cashew (optional) 4. After few mins add our grinded mint paste and add salt.Fry this till the green smell comes out of our gravy (max 2 to 3 mins). 5. Mix mint gravy with cooked rice. Check for salt if needed add salt while mixing. 

Crispy Murukku

Ingredients : Besan flour - 3 full tbspns Rice flour - 2 full cups Salt as per taste Sesame - 2 spn Asafoetida Oil - 2 tbspn Ghee - 1 tbspn (optional) Method : Mix all Ingredients and make it as chappathi dough but this dough must be softer than chappathi dough(use water as per need ). Use muruku achu and prepare muruku :)  Heat pan with enough Oil (medium flame ) Drop muruku in oil , wait until it turn light golden color.

Channa /Kondai Kadalai Kuzhambu

Ingredients : Kondai kadalai / Black channa - 1/4 cup Chopped Onion - 1 Chopped Tomato - 1 Chopped Potato - 1 Chopped Brinjal - 5  Tamarind Juice - 1/4 cup (OPTIONAL) Mustard - 1/2 spn Turmeric powder - 1/2 spn Chilly Powder - 1/2 tbspn Salt To Grind : Grated Coconut - 2 to 3 tbspns Red chilly - 2 Black pepper - 1 spn Fennel Seeds - 1/2 spn Method : Wash and soak channa Over night. Heat oil (2 tbspns) Drop Mustard , curry leaves. Drop Onion and fry it. Add tomato and cook it well. Add Chopped Brinjals , Potatoes and drumstick and fry it for few mins. Add Cooked Channa. Now add the paste we grinded with half cup of water. Add salt , turmeric powder and chilly powder. Cook until all veggies are cooked enough. Add Tamarind juice and cook it for 3 to 5 mins in low-med flame.(optional step) Goes well with hot rice or Tiffin items like idly, dosa , poori and chappathi :)
